Summer is here, really here! We are melting away in the streets of Paris as I write these lines. And while I did this, it occurred to me that baking on this hot hot day was probably not the best of ideas. On the other hand I now have a delicious apricot tart sitting on my counter, waiting for the vanilla ice cream I will most definitely add to it. Not to mention the fact that my friends will be delighted as dessert is ready for tonight’s dinner party! Overall, not too bad.
“Tarte aux abricots” is one of the many classics in French pastry, you can find it in almost every bakery or “boulangerie” (this is where they sell the bread here in France, and some other yummy treats!). It consists of a sablée dough, frangipane cream and apricots.

It’s been a crazy year so far. Good crazy though! I moved back to Paris, I decided to start a blog, and to host dinners at our home. And now, this is all actually happening; a week ago we launched my new website, which is why this post is possible right now and my first dinner as a supper club host is just around the corner. :)

Financiers are one of my favorite French pastry classics. During my first year living in Paris, my neighborhood bakery had the best ones: airy, buttery and moist. Perfect treat to eat on the go. And that is exactly what I did almost every day on way back home from pastry school! The happiest times. I loved them even more when I learned that these French almond cakes were so easy to make. You can be sitting down with a cup of coffee having delicious financiers in about 30 minutes from now. Go pre-heat the oven 😉.
