Homemade Granola

One of my favourite meals is most definitely breakfast. We don’t do eggs and co this early in the day, except for the weekend maybe, or vacation. My breakfast is more of the continental variety: fruit, toast, coffee, yoghurt and cereal. I love cereal, especially granola.
Full disclosure: it never occurred to me one could actually make its own granola, I assumed supermarket was the only option. It was only after I started my Instagram account around a year ago that I notices that almost everyone I followed made at some point or another their own granola. I remember thinking that it would be cool to do it. But I forgot about it.

Spinach & Mozzarella Empanadas

The past year involved making a big amount of empanadas. It was due mainly to the diners I hosted. I served a smaller version of this classical Argentinean finger food as part of the appetizer with chimichurri sauce, and they were a big hit. My guests loved them. Every time. And that made me happy. Because I cook to please whomever is sitting at my table, and naturally if they are happy so am I.
As I prepared more and more empanadas I perfected the recipe a lot. I went from store bought dough to homemade one because it is cheaper (at least here in France where imported Argentinean empanada dough can be quite expensive and not so easy to get your hands on) and tastier. I like them this way a lot more. And you control de process. I know when the dough has been prepared and I’m 100 % sure I’m serving a fresh product. I couldn’t really tell how old the rounds I bought were and if they had been properly handled by respecting the chain of cold.

Double Chocolate & Vanilla Bean Muffins

Last week I went away for a few days to spend some time with my mom and sisters in New York City. It was kind of family bachelorette party! We had the best of times! I had a plan for when I left: I wanted to leave some delicious things for my boyfriend to eat while I was away.The first thing that came to mind was something for breakfast.
He loves, loves muffins so I thought I might bake some chocolate chip muffins for him to enjoy over the weekend. I was going to leave some on the counter for him to eat over the first few mornings I wouldn’t be home, and freeze the rest so he could still enjoy fresh baked muffins the rest of the week. He had only to remove the muffin form the freezer the night before, and heat it for 5 minutes in the morning while he brushed his teeth! Piece of cake!
