Chanterelles & Chicken Tartelettes

A little confession: many times I cook based of what I can find in my fridge and freezer. Other times I shop to cook something specific, when I have a special craving or we are having people over. Otherwise I'm not as organized as I would like to. I don't plan a menu for the week and shop accordingly, although I should. Instead I shop for the week with no plan in mind, and then go from there. If I could I'd choose option two: a place where I’m organized and don’t have to run down to the supermarket because I decided to make a Spanish omelette because I had a big batch of potatoes and later realized I had no eggs!!
In my y universe we improvise, and this is exactly how this recipe came to life. With a run to the supermarket to get cream included!

Cod with Espelette Pepper Clafoutis

I love fish and I like to eat a lot of it. I normally eat it a la "poele" which means cooked in a pan with a drizzle of olive oil or butter a few minutes on each side, and you are good to go. Easy, healthy and somewhat quick. I could eat this very often. According to my boyfriend, too often. He’s not a big fan! Sad face.
I had to come up with a different way to present plain old Cod to him. Suddenly I remembered that when I studied al Lenôtre we once made a fish clafoutis of some kind. I remember being so positively surprised I ate the whole thing without breathing. My teacher at the time was a Meilleur Ouvrier de France (best craftsman of France, which is the highest distinction a Chef can get here. It’s a huge deal!), so obviously his clafoutis was heavenly, perfect I would say. With this in mind I decided to give it a try and was quite pleased with the results.

Valentine's Day Cookies

Back home this day is not a big day, and it has never meant anything special to me. It’s not something I ever celebrated. This has a bright side… I never felt bad for not having a date on February 14th because it was just like any other day. So one less traumatic event form adolescence to worry about!
Now I am surrounded by it and reminded constantly about this big, romantic day! Every pastry shop in Paris is doing cakes to celebrate love as are the chocolate stores… Everything is very very pretty! Gorgeous really. So I decided to give it a go. Plus I happen to have a date for the occasion, so I’m feeling pretty valentiny (yes I justmade up the word!).
