Cod with Espelette Pepper Clafoutis

I love fish and I like to eat a lot of it. I normally eat it a la "poele" which means cooked in a pan with a drizzle of olive oil or butter a few minutes on each side, and you are good to go. Easy, healthy and somewhat quick. I could eat this very often. According to my boyfriend, too often. He’s not a big fan! Sad face.
I had to come up with a different way to present plain old Cod to him. Suddenly I remembered that when I studied al Lenôtre we once made a fish clafoutis of some kind. I remember being so positively surprised I ate the whole thing without breathing. My teacher at the time was a Meilleur Ouvrier de France (best craftsman of France, which is the highest distinction a Chef can get here. It’s a huge deal!), so obviously his clafoutis was heavenly, perfect I would say. With this in mind I decided to give it a try and was quite pleased with the results.

Chicken Pie

As I write this I am sitting at a cool café called Café Craft by the Canal Saint Martin. The cool kids’ neighborhood. I came here with a friend looking for a working space away from home. She did the internet research and came across this place. Common tables, where you can find individual work spaces with plug-ins for your computer or your phone and excellent coffee.
There’s chicken pie on the menu today. Oh oh oh. You’ll love this. I’m sure. This is one the hits we use to have while growing up. It was always a happy day when the answer to the question “what are we have having for dinner today?” was “chicken pie!”. Mostly we got this answer during the winter, it is a wintery kind of meal I think; that’s why I thought of making it now. I was inspired by the cold!

Bonci's Pizza Dough

I am a pizza lover, a pizza fan and maybe a pizza addict too. I have tasted my fair share of pizza during my time here on planet earth and I can proudly say I have tasted it all. Thin, thick, soggy, crispy, too thin, too thick, too crispy... Yes there is such thing as too crispy.
Pizza is good, but home-made pizza is even better. I have always been convinced of this, and after discovering this new recipe I’m sharing with you here today I am now certain of this.
On top of loving pizza I absolutely love making it. I have been doing it all my life. Even as a kid I vividly remember making pizza for the whole family, and when I say whole I mean the extended family; cousins, aunts and uncles. All of them. And I loved it. At the time I didn’t even use a recipe, flour, water plus yeast, a little olive oil and salt and I was ready to go. Kneading the dough was something I enjoyed so much, and I still do. It’s very relaxing for me.
